What I Ordered

I ordered their signature Genkotsu Hamburger cooked medium rare. The texture immediately stood out — you can feel the meat grains instead of the usual mushy patty texture found in many burgers. There was no overwhelming seasoning; it’s all about the meat itself, and you can season it with salt and pepper as you like.

As for juiciness, it wasn’t dry but not super juicy either — I’d call it a nice balance.

What’s unique here is the live cutting of the patty at your table — a signature touch from Sawayaka. The onion-based sauce was also quite good, not as sour or wine-heavy as other places I’ve been to.
